Lactose Free Hot Cocoa Mix PDF Print E-mail

I'm lactose intolerant and it's always a challenge to find a hot cocoa mix that is free of milk products. So I decided to make my own.

Lactose Free Hot Cocoa Mix

Sift together the following:
1 cup baking cocoa
1 cup powdered sugar

or for a richer flavor

1 cup baking cocoa
1/2 cup powdered sugar
and stir in 1/2 cup brown sugar

Store mix in an air tight container with a lid. To use, measure 2 Tablespoons of mix into a mug of your favorite lactose free milk. Stir, reheat to desired temperature and enjoy.

Note: Be sure to use a sifter to combine the mix or you'll end up with bitter cocoa lumps no matter how much you stir.

Chocolate Oatmeal Cake

1 1/2 cups cooked oatmeal
1 stick butter or margarine
2 eggs
3/4 cups sugar
1/2 cup brown sugar
1/4 cup cocoa
1 cup flour
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon vanilla

Combine cooked oatmeal and stick of butter in a microwave safe dish. Microwave until butter softens. Add in egg and vanilla. Mix together. Combine remaining ingredients in a mixing bowl. Add oatmeal mixture to dry ingredients. Mix together. Pour into a 9x13 baking dish that has been sprayed with pan spray. Bake at 350 for 25 minutes.

Whether you're making chili, tacos, or soup for dinner, there are many recipes that call for one or two cans of beans. One way to save money in this area is to plan ahead and buy dried beans rather than canned beans. It will take a little planning, but there are some things you can do to make it a little easier on yourself and save you money on your grocery bill.

Beans are relatively easy to cook. Just follow the directions on the back of the bag and you can't go wrong. If you are in a hurry use the quick soak method on the back of the bag. Or, if you've planned your meals out in advance you can soak your beans overnight and cook them the next day. Once they are rinsed, sorted, and softened you can place them in a crockpot to cook all day long, especially if you plan to be out of the house during the day. Otherwise you should be able to cook them on the stove top according to the package directions in 2 to 2 1/2 hours time.

Once the beans are cooked let them cool for 20 minutes or until they are easy to work with. I usually cook a bag of beans when I know I will need them for my dinner recipe that night. I scoop out a couple ladles full of beans into my recipe and divide the remaining beans between two or three gallon ziplock bags. I flatten them across the bottom of the bag and press the air out, folding the bag over to seal it. Place the bagged beans flat in the freezer for future recipes.

Now, the next time you want to make chili or tacos or soup you can just go to the freezer, get out your bag of frozen cooked beans and feel good about saving money on your grocery bill.

Frozen beans can be reheated on the stove top by placing them in a medium sized skillet with 1/4 cup of water. Place the lid on the skillet and heat the beans on medium-low heat until they thaw. Add extra water if needed.

 
Chili Verde (crockpot) PDF Print E-mail
1 jar of Salsa Verde (16 oz size or so)
one 4 oz can chopped green chilies
cups chopped cooked chicken breast
14 oz black beans
14 oz white beans
hot cooked rice (brown or wild)

Place salsa verde and green chilies in the crockpot. Add in cooked chicken and beans. Stir to mix. Cook on high for 4-6 hours or low for 8 hours. Serve over cooked rice. Add in fresh tortillas, green salad, and chips and salsa to complete your meal.

 
Chocolate Bread PDF Print E-mail

1/4 cup margarine or butter
2/3 cup sugar
1 egg
1 1/2 cup flour
1/3 cup cocoa
1 teaspoon baking soda
1/4 teaspoon salt
1 cup buttermilk

Preheat oven to 350. Cream butter, sugar and egg. Mix dry ingredients together in separate mixing bowl. Add dry ingredients alternately with buttermilk. Pour batter into greased and floured loaf pan. Bake in 350 oven for 55-60 minutes.
