Chewy Chocolate Cookies PDF Print E-mail
Ingredients
1/4 cup margarine ( of substitute of your choice) softened
1 egg (or 2 egg whites)
2 cups unsifted flour
1 cup sugar (can use less if desired)
2 teaspoons vanilla
3/4 cup cocoa
1 1/4 teaspoons baking soda
1/2 teaspoon salt
2-4 tablespoons water
Cream margarine and sugar in a large bowl. Add egg, vanilla, water, 1/4 teaspoon of baking soda and blend well. Combine flour, 1 teaspoon of baking soda, cocoa, and salt. Blend into creamed mixture. Drop by teaspoonfuls onto ungreased baking sheet. Bake at 350 for 8-9 minutes. Cookies will be soft. Cool on cookie sheet until set, about 1 minute. Remove to wire rack to cool. 

 

 

 
Homemade Pizza Night PDF Print E-mail

Pick one night of the week as homemade pizza night. Top with 4–8 oz tomato sauce mixed with 1/2 teaspoon of basil and/or oregano, and 1/4 teaspoon of garlic power; add leftover cooked ground meat, chopped chicken, or turkey pepperonis, chopped bell peppers, mushrooms or onions, and a small amount of cheese for an inexpensive meal.

When you mix up the dough, make some extra dough. Press dough into pizza pans (use disposable pans if desired). Wrap in plastic wrap or bag in extra-large ziplocks and freeze for future use. Once they are frozen they can be popped out of the pans and stacked in your freezer. This will save you time when preparing pizza the next week. Take one or two out of the freezer and let them thaw and rise slightly before adding toppings and baking. See pizza dough recipe on this site.

 
Chopped Chicken PDF Print E-mail

After you bake a chicken, let it cool slightly.
Skin and de-bone it, then chop meat into bite sized pieces.
Divide meat into meal sized portions and place in quart-sized ziplocks.
Freeze for a quick and economical meat addition to soups, enchiladas or other recipe calling for cooked, chopped meat.

 
Baked Chicken PDF Print E-mail
Ingredients:
whole chicken (skin chicken if desired– then brush with 1–2 tablespoons olive or canola oil)
1 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon ground pepper
1–2 tablespoons dried minced onion

Rinse whole chicken and pat dry. Place breast side up on a rack in shallow roasting pan. Sprinkle with herb, onion, salt and pepper. Roast uncovered in 375 oven for 1-1/4 to 1 1/2 hours. (or until drumsticks twist easily in sockets)

Serve with baked potatoes, green salad and carrot sticks.
 
Breakfast Pizza PDF Print E-mail
Ingredients:
Pizza dough recipe on this site
1–1/2 cups cooked hashbrowned potatoes
1/2 cup shredded cheese
one green onion diced
3 eggs (or 6 egg whites)
2–4 tablespoons milk
salt and pepper to taste

Make pizza dough. When dough has raised, punch down and divide in half. Press one half of the dough into a 9x13 glass baking dish sprayed with no stick cooking spray. Press other half into a pizza pan and freeze for future use.

Spread cooked hashbrowned potatoes onto crust. Sprinkle with cheese and onions. In a small bowl beat eggs and milk along with salt and pepper to taste. Pour egg mixture over crust making sure egg covers edges of the crust.

Bake in 400 degree oven for 25 minutes.
