Ingredients: One pound ground turkey meat 8-10 flour tortillas 1 1/2 cups shredded cheese garlic powder salt pepper no stick cooking spray
Enchilada Sauce recipe
Brown 1 pound of ground turkey meat in a skillet. Season meat with garlic powder salt and pepper.
Prepare Enchiladas sauce (see recipe on this site) in a medium sauce pan. Drain meat. In a medium sized bowl combine meat and 1 cup of enchilada sauce with 1/4 cup shredded cheese.

Ingredients: 1 1/4 cup flour 1 tablespoon baking powder 1 tablespoon brown sugar (honey or other sweetener) 1/2 teaspoon salt (or less if desired) 1/4 teaspoon ginger 1/4 teaspoon nutmeg 1/2 teaspoon cinnamon 1 cup fat-free milk 1 cup canned pumpkin 1/4 cup canola oil (or other oil of your choice)
Mix dry ingredients in a medium mixing bowl. In a separate bowl combine milk, pumpkin and oil. Add liquid to dry ingredients and stir until combined. Spoon batter(approximately 1/8-1/4 cup per pancake) onto nonstick pan over medium heat. When browned on one side, flip pancakes over and brown other side. Watch carefully as bubbles do not appear before time to flip pancakes.

Ingredients: 1 cup warm water 2 teaspoons active dry yeast 1 teaspoon sugar 1 teaspoon salt 2 tablespoons olive oil 2 1/2 cups to 3 cups of white flour (for whole grain crust try a mixture of white and whole grain flour) In a large mixing bowl combine yeast and sugar with warm water. Stir until yeast is dissolved. Let set until yeast is foamy, about 5 minutes. Add salt, oil and 2 1/2 cups of flour. Stir until combined and dough forms a ball. Dump dough onto floured board and knead until dough is no longer sticky. Add flour as needed.
