Ingredients: 2 cups dry oats 1/2 teaspoon baking soda 1 cup flour 2 tablespoons baking powder 1 teaspoon salt 2 tablespoons sugar (you may omit sugar if you substitute applesauce for the oil) 2 1/2 cups buttermilk or sour milk 1/3 cup canola oil (or substitute same amount of applesauce for lower fat content) 2 eggs beaten (or 4 egg whites)
In a medium sized mixing bowl combine dry ingredients. Add buttermilk, oil and eggs. Mix until combined and let set for a few minutes. Spoon batter (1/8 cup per pancake) onto non stick skillet. Cook until bubbles appear on top. Flip and cook on the other side until done.
