Two Summer Fun Hotdog Recipes For the Kids PDF Print E-mail

Corn Dog Muffins

Mix together:

1 cup flour

3/4 cup cornmeal

1/3 cup brown sugar

2 teaspoons baking powder

Add:

3/4 cup milk

1/4 cup canola oil

1 beaten egg

1 teaspoon vanilla

Stir until combined

Cut 6 hotdogs in half. Spoon corn muffin mixture into a 12 count non stick muffin tin. Place one half hotdog into each unbaked muffin. Bake 15-20 minutes at 400 degrees, or until muffins are golden brown.

 

Octopus Hotdogs

Ingredients:

one package of hotdogs

dry spaghetti noodles

Cut each hotdog into thirds. Take 4 dry spaghetti noodles and pierce through each hotdog piece lengthwise. Each octopus dog should have 8 legs. Place finished dogs into a pot of boiling water and cook for 8 minutes or until noodles are tender. Serve with ketchup or other dip and sides for a fun meal.

 

 
Chili Verde (crockpot) PDF Print E-mail
1 jar of Salsa Verde (16 oz size or so)
one 4 oz can chopped green chilies
2 cups chopped cooked chicken breast
14 oz black beans
14 oz white beans
hot cooked rice (brown or wild)

Place salsa verde and green chilies in the crockpot. Add in cooked chicken and beans. Stir to mix. Cook on high for 4-6 hours or low for 8 hours. Serve over cooked rice. Add in fresh tortillas, green salad, chips and salsa to complete your meal.

 
Homemade Pizza Night PDF Print E-mail

Pick one night of the week as homemade pizza night. Top with 4–8 oz tomato sauce mixed with 1/2 teaspoon of basil and/or oregano, and 1/4 teaspoon of garlic power; add leftover cooked ground meat, chopped chicken, or turkey pepperonis, chopped bell peppers, mushrooms or onions, and a small amount of cheese for an inexpensive meal.

When you mix up the dough, make some extra dough. Press dough into pizza pans (use disposable pans if desired). Wrap in plastic wrap or bag in extra-large ziplocks and freeze for future use. Once they are frozen they can be popped out of the pans and stacked in your freezer. This will save you time when preparing pizza the next week. Take one or two out of the freezer and let them thaw and rise slightly before adding toppings and baking. See pizza dough recipe on this site.

 
Baked Chicken PDF Print E-mail
Ingredients:
whole chicken (skin chicken if desired– then brush with 1–2 tablespoons olive or canola oil)
1 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon ground pepper
1–2 tablespoons dried minced onion

Rinse whole chicken and pat dry. Place breast side up on a rack in shallow roasting pan. Sprinkle with herb, onion, salt and pepper. Roast uncovered in 375 oven for 1-1/4 to 1 1/2 hours. (or until drumsticks twist easily in sockets)

Serve with baked potatoes, green salad and carrot sticks.
 
Salmon Patties PDF Print E-mail

Ingredients:

1 egg beaten (or may substitute 2 egg whites)
1 tablespoon parsley
1 teaspoon prepared mustard
1/2 teaspoon baking powder
1 teaspoon worcestershire sauce
1 whole grain slice bread pinched into small pieces
1 6oz can tuna or salmon (de-boned)
dash of white pepper


Combine all ingredients except salmon and bread crumbs in a bowl. Fold in salmon and bread crumbs. Form into small patties. Cook in a medium sized nonstick skillet over medium heat until browned on both sides. May cook in a small amount of olive or canola oil.
