Turkey Enchiladas with Red Sauce PDF Print E-mail

Ingredients:

One pound ground turkey meat
8-10 flour tortillas
1 1/2 cups shredded cheese
garlic powder
salt
pepper
no stick cooking spray

Enchilada Sauce recipe


Brown 1 pound of ground turkey meat in a skillet. Season meat with garlic powder salt and pepper.

Prepare Enchiladas sauce (see recipe on this site) in a medium sauce pan. Drain meat. In a medium sized bowl combine meat and 1 cup of enchilada sauce with 1/4 cup shredded cheese.


Spray a 9x13 glass baking dish with no stick cooking spray. Place one flour tortilla in greased baking dish and spoon 2 tablespoons of meat mixture into the tortilla. Carefully roll up tortilla and slide to one end of the dish. Repeat with remaining tortillas until baking dish is full. Pour extra enchilada sauce on top of filled rolled up tortillas and top with shredded cheese. Bake in 350 oven for 20 minutes or until warmed and cheese is melted.
